Pear and cinnamon chocolate cake


350 g dark chocolate
250 g butter
5 eggs, separated 
5 Tbsp sugar
5 Tbsp flour
3 small pears
2 tsp cinnamon

How to

Start pealing the pears, leaving the stems on. Put the pears in boiling water and cook until they are softened but still firm, about 10 minutes. Set aside to cool.
Melt butter and chocolare to low heat, stirring constantly. Let cool.
Beat the egg yolks whit the sugar until pale. Add the melted chocolate mixture and blend well.
Beat the egg whites until stiff, then add them to the egg-chocolate batter. Add the flour and cinnamon. Mix to obtain a smooth batter.
Put the mixture in a loaf tin, then arrage the pears inside the batter leaving the stem out.
Cook at 180° for about 30 minutes.
